cauliflower crust pizza

With the Hawaii trip coming up, I have been on the whole "no carb" business (more specifically the Dukan diet) to get bikini ready. Has it been successful? Yes. Have I been craving pizza? You have no idea. Enter....Cauliflower crust! 

I found a really great recipe thanks to Pinterest from Tasty Kitchen Blog. My only suggestion? If you are like me and can't eat dairy and using Daiya "cheese" use only about half of what the recipe calls for - otherwise it is quite floppy for crust. Below are the ingredients I chose to use. 

Ingredients:
1 small head of cauliflower
1 egg
1/4 cup Daiya "mozzarella cheese"
1/4 tsp pink himalayan salt
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp garlic powder

1/4 cup Daiya "mozzarella cheese"
chopped onion
cooked chicken breast
salami 
(I used whatever I had in the fridge at the time - get creative!) 

"Rice" the cauliflower florets in a food processor until a "fluffy" type texture, cover in a bowl and microwave for 4 min. Dump onto a kitchen towel and allow to cool for about 5 minutes, proceed to squeeze out ALL the water you can into the sink. Combine all "dough" ingredients, and mix by hand, pressing into a ball. 

Press the dough into your pizza shape, you will need to do so on a greased sheet, I chose to use my favorite Silpat. Bake in the oven at 450* for 9 min, cover it with your toppings and cook for another 6 min. Most important step remaining? Allow it to cool for 3-5 min so your pizza won't fall apart in your hands. Enjoy!

Note: Now if I was currently consuming sugar, I would pair it with some real cane sugar Coke for an extra special treat!
